Application
Pimenta oil, also known as allspice oil (CAS 8006-77-7), is a steam-distilled essential oil from the unripe berries of Pimenta dioica, characterized by a warm, spicy, clove-like, and slightly sweet, peppery aroma with nutmeg and cinnamon undertones. In the flavor industry, it is widely used as a natural flavoring agent to impart authentic allspice notes to meat products (sausages, pâtés), marinades, pickles, sauces, baked goods, confectionery, and beverages such as mulled wines and liqueurs. As a fragrance ingredient, it contributes a spicy, warm, and sweet base note to perfumes, colognes, soaps, shampoos, and household products like candles and potpourri. Pimenta oil also exhibits potent antioxidant, antimicrobial, and antifungal properties, making it valuable as a natural food preservative and in topical formulations for skin infections. Additionally, it serves as a source of eugenol for the synthesis of other aroma chemicals and as a digestive aid in nutraceuticals.
